Sisig is said to have originated from local residents of Pampanga who bought unused pig heads from commissaries of Clark Air Base in Angeles City, Pampanga. Pig heads were bought at a cheap price because they were not included in the meals for the US Air Force personnel stationed in Clark Air Base.
Sisig is easy to prepare. It can be boiled, broiled, or fried. For sanitary purposes, the pig’s head is first boiled to remove hairs and to tenderize it. Sisig has different variations and portions that it may be grilled, broiled, and chopped. Nowadays, local chefs have made a twist in preparing sisig – with squid, tuna, tofu, and chicken.
Where can we find the best sisig?
Actually, the best sisig is found everywhere because everyone has his own style and preferences. However, Kapampangans can prepare sisig well. In fact, Lucia Cunanan, or popularly known as Aling Lucing from Pampanga developed the first sisig in 1974.
